Summertime means spending more
time together as a family, dining al fresco and enjoying the
flavors of the season. This summer, try a new twist on traditional
outdoor recipes that your kids will love, like the Asian-inspired
chicken skewers developed by Connie Guttersen, R.D., Ph.D., nutrition
instructor at the Culinary Institute of America, author of The
Sonoma Diet and mom. Connie developed three new recipes
that will please everyone in the family, even the pickiest eater.
Connies recipes are a tasty and
healthy substitution to traditional potato and macaroni salads,
which tend to be loaded with mayonnaise. Her recipes include
a variety of vegetables, such as black and Great Northern beans,
to help moms get more veggies on their families plates.

What most moms dont
realize is that beans are a vegetable and an easy ingredient
to include in warm weather dishes. Its as simple as adding
black beans into guacamole or cannellini beans into pastas,
says Guttersen.

in your Favorite Summer Dishes
Beans can easily be mixed into summer
side salads. Try a Latin black bean and corn salad or Great Northern
beans for a lighter potato salad.

Add color and texture to your familys
favorite dips by including beans. Puree beans into a creamy spread
like hummus or add them whole to Greek yogurt dips or salsas.

Bean Guacamole
Spread a layer of your favorite
beans with tasty spices like cumin or chili powder to enhance
Mexican dishes. Pinto, refried or black beans work best.
